“Gastrin” is an energy delight of a great nutritional value with its crust made of wheatmeal.

With olive oil, honey, nuts, lemon juice and molasses , a real treasure of taste , health and energy.

Gastrin is one of the few Cretan sweet delights that it is originated from ancient years and specifically since Minoan time

The recipe is described by the ancient Greek Athineo in his glorious work “Dipnosofistes”

THE RECIPE

For the crust :

1/2 kilo of wheatmeal

1 teaspoon of salt

1 cup of olive oil

juice of 1 lemon

1 glass of water

100 gr of sesame

 

For the filling :

400 gr of hazelnuts

400 gr of walnuts

400 gr of almonds

100 gr of sesame

100 gr seed of poppy plant

200 gr of pepper

1 cup of honey

 

 

For the syrup

2 cups of sugar

1 cup of water

1/4 cup of molasses

250 gr of honey

Lemon juice

 

 

The procedure

We mix all the ingredients together  for the crust and we knead the dough,  adding at the end the sesame after having it thrashed and roasted .

From the dough we make 3 crusts.  We mix together all the ingredients for the filling.

In a baking tray we spread the first crust and we pour half of the filling on it.

Then we lay the second crust and we pour the rest of the filling on it.

We cover it with the third crust , we pour some water and sesame and we bake it for around half an hour in an oven at a moderate temperature

We prepare the syrup and we boil it for 8 minutes.    When the sweet is cold we pour on it the warm syrup and the delicacy is ready!
